I have a brunch to which you are all invited to participate.

Let me start with duck breast sliced thin and pounded thinner. Then let us put some mangoes and some peaches into the pan and sautee them a bit. Before they are thoroughly cooked, let us take them off the stove and roll some of them up in the duck nickambucko. Using toothpicks or string, lets us hold the ingredients all together and dip them each in an egg wash followed by bread crumbs. We will then sautee each of them in a skillet until brown and then place the skillet in the oven at 350 degrees for about 12 minutes. Actually, it depends on how thin the duck has been beaten. Beat the duck you amateurs!!

When the duck is finished spread the remainder of the cooking mangoes and peaches over the duck.

I didn't mention putting on my bisquits earlier. I know you are catching on so I didn't want to insult you. They should be ready now. Take them out of the oven. Put a towel over them to keep them warm.

For each person, poach two eggs and put a bit of hollandaise sauce on the eggs. Whose recipe are we talking about here?

Over the eggs and the duck sprinkle some finely chopped scallions.

Put some jams and jellies on the table with some unsalted butter and request your drink.

Some will want Folgers fresh. Not a bad choice at all. Some will want to add a tad bit of whipped cream to it. Others might prefer a taste of Bailey Irish Cream, or as Becky prefers a toddy of Irish whiskey with the whipped on top.

Today, I will drink tomatoe juice and Tabasco. A bit of celery, a bit of pepper, a bit of horseradish, and a bit of bitters. Yes, you heard me. You don't have to join me.

I almost didn't serve the crepes with the strawberries since we had the duck with the mangoes and peaches. But I will. And I will add a bit of whipped cream and a tad of powdered sugar.

What did I forget for you? Let me know and I will do my best. I might even learn to disguish grits into a dish...who knows.

I was asked how to cook the mangoes and peaches. Take a bit of Extra virgin olive oil and warm it up. Then put a splash of champagne in the skillet and let it warm up. Finally, add the fruit and some more champange to half the height of the fruit. Cook for less than 3 minutes. My opinion only.
